Happy Birthday Lauren

Lauren is an eager young George Brown culinary student who, along with classmate Ama, happily spent the day learning all about butchery from Gunter. 
It was so nice to see their unbridled enthusiasm as they made sausages and trimmed fat. We need more young cooks like this, cooks who seek out new experiences and try to learn as much as they can from as many people as they can.

Battle Offal, and the winner is....

Albert Ponzo the chef of Le Select Bistro took top prize at Ivy Knight's Battle Offal held at the Drake this past Monday. The competition was tough with entries from Guy Rawlings (Black Hoof), Tawfik Shehata (Vertical), Ted Corrado (C5) and Mark Cutrara (Cowbell).
In the end Chef Ponzo's Bison Heart Tonnato won over the crowd and he was awarded with a hindquarter of Black Bow Farms Berkshire pork compliments of Select Fine Foods. 
Gunter was on hand to present the award to him, with the help of Joel Solish (check out his food blog here: http://getthefoodie411.blogspot.com/) and Stephen Lee, who were shanghaied into carrying the huge piece of meat up to the stage.
